POPULAR CHILEAN BEVERAGE: MOTE CON HUESILLOS



 One of the most popular beverages of the central Chile is the "Mote con Huesillos".  This beverage  is served in the summertime (in these hottest days at this side of the world), required by people and can be found at street stands and some restaurants. The"mote", is the wheat grain boiled and removed from its husk, generally in an industrial process. The "huesillo" is dried peach. The preparation is to soak the huesillos overnight, then the water of the soaked huesillos is boiled and molasses added. The boiling is about 45 minutes, then let cool down. The mote is boiled in another pot about 30 min., then strain and let them cool down too and be put in the fridge. Finally, in a glass; fill it with mote and the huesillo juice. Ready to drink!! :)
